Beat The Winter Blues with These Soups

The winter months can put you in some off moods for sure. Apart from the cold climate, pollution is also taking its toll. As if the pandemic lockdown was not enough, Delhi is now considering a pollution lockdown. Well, one way or the other, you cannot go out. So, it’s good to plan indoor activities to stay healthy, get some entertainment, and keep those blues away.

The thing about winter is the feel-good factor that you experience when you eat or drink something warm. And at times, you could have some soul-satisfying food that combines eating and drinking. Of course, that warm food that everyone craves during winters is soup. Soups come in various flavours- clear, vegetarian, non-vegetarian, smoky, with noodles, chunks, and more. With soups, there is always something for everyone. So, here are a few recipes that you could try out this winter. 

Carrot Ginger Soup

Winter is when you get fresh carrots, and nothing beats making some healthy soup using it.

Ingredients

  • 3 to 4 carrots sliced into cubes or rounds
  • 1 tbsp finely sliced ginger 
  • One medium onion sliced

Preparation

Take a wide pan and sauté the onions with little ghee or oil. Sprinkle the chopped ginger into it and keep sautéing till the onions turn translucent. Then add the chopped carrots into the pan and sauté for a while and then cover and simmer. After a few minutes, remove the cover, add one glass of water, sprinkle some salt, and cover and cook for a while. When the carrots get cooked, remove the pan from the fire and cool. Blend the cooked carrot mixture in a mixer jar into a smooth puree. Transfer the puree into another pan, add little water to keep a slightly thick flowing consistency, and simmer it. Check and adjust for salt, sprinkle some pepper powder and mix it well. You could also add a little cinnamon powder if you like the flavour. Garnish with herbs of your choice or fried garlic pods or bread crumbs as you like. 

Pasta Minestrone soup                                            

Biting into some crunchy hot veggies and pasta and feeling the various flavours teasing your palate is one of those lovely wintery moments to cherish. Here is a soup that can be dished out easily to satisfy this craving.

Ingredients

  • 4 to 5 cups of cubed veggies (carrots, beans, potatoes, green peas, cauliflower, etc.)
  • 1 cup of cooked pasta (fusilli, macaroni, elbow, etc.)
  • 3 tomatoes pureed
  • 1 cup cooked kidney beans (rajma) - optional
  • ½ cup finely chopped onion
  • 3 finely chopped garlic cloves
  • 1 tsp pepper powder

Preparation

Sauté onion, garlic, and veggies in a bit of oil in a pan in that order of adding. Add the tomato puree and stir well. Add 4 cups of water (or vegetable stock if you have), salt, and cover and cook the veggies. Once veggies are cooked and blended with the tomato puree, add the cooked pasta and pepper powder and mix in. Most often, minestrone contains cooked kidney beans (rajma). If you prefer this, you could add a cup of cooked beans at this point or skip it. Simmer for a while, garnish with chopped coriander leaves and some grated cheese, if you prefer.

Tomato Jasmine Tea Soup

Perhaps the most coveted winter drink is tea; oh, but then, so is soup. But what if we could combine the two! Yes, here is a recipe to try and mix soup and tea to get a unique combination of flavours. 

Ingredients

  • Four cups boiled tomato puree
  • 1 tbsp (boiled) jasmine tea
  • 1 tsp chopped ginger
  • 1 tsp chopped basil
  • 1 pinch of pepper powder

Preparation

Mix the tomato puree, jasmine tea, basil, salt, and pepper. In a pan, sauté the ginger a little, add the tomato tea mixture and simmer for a while. This soup can be served hot as is, or you could add some fried noodles to this to make it crunchy.
